King Family Winery’s 9,859 square foot Production Facility includes roof pergolas and accent barn doors that accentuated the most up-to-date and state-of-the-art production equipment from around the world, and was completed at the end of August 2013.
Processing equipment, fermentation, and chilling tanks are operated from a gravity fed grape reception which flow into bottling and storage centers. Imported stainless steel tanks from Italy are surrounded by an aluminium catwalk mezzanine, with an overhead monorail that utilizes a hoist and punch down system as part of the fermentation process. A fully digital process control system remotely controls both tank temperature (precisely within a tenth of a degree), and twin chillers and recirculation pumps that provide subfreezing glycol mixture to the tanks. Housing the final product is a bottling line and chilled storage center. A research and development lab sits next door to a complex drip disposal system that removes process waste water from the facility and introduces it back into the soil while creating a minimal impact to the environment.
